The green stem (Shanghai) Pak Choi is smaller than Mei Qing Choi and slower bolting than Li Ren Choi, which it resembles in size. The leaves are a deeper green and the habit more erect. It can be harvested as mini pak choi for larger bags, or left to grow larger for the three-piece bags popular for farmers markets. The slow bolting gives it a longer harvest window.
